We are seeking a talented culinary professional to join the Food and Beverage (F&B) team within Customer Experience Division. You will create innovative and exquisite cuisines for our inflight and lounge menus that elevate our passengers dining experience.

Key Responsibilities

• Stay abreast of evolving F&B trends.
• Collaborate with business units to create and deliver dining experiences that exceed customers’ expectations.
• Create dishes and menus that appeal to our customers.
• Leverage local and seasonal produce in dishes to highlight the culinary identity of each country, enhance cost efficiency, and support sustainability.
• Conduct and guide stations on meal presentations.
• Propose and hold periodic F&B promotions to entice customers with refreshed F&B experiences.
• Engage business unit(s) to conduct competitor research and trials on customer satisfaction and formulate actionable recommendations for F&B initiatives.
• Investigate feedback on F&B offerings and implementing improvements.
• Analyse passenger and crew feedback, evaluate survey results, perform competitor benchspaning, conduct meal audits and understand customer value drivers to continuously elevate F&B offerings.
• Effectively manage F&B cost, keeping within budget without compromising on quality and standards.
• Work with business unit(s) to monitor and uphold F&B standards.
• Support F&B activities and projects as and when required.
• Ensure timeliness and accuracy in menu planning. Align dish design with available serviceware. Proactively manage inventory by factoring in serviceware exchange during menu development, and initiate timely deadheading where required to avoid operational disruptions.

Requirements

• Culinary degree or relevant experience in senior culinary leadership role.
• Preferably at least 8 years of experience in the premium hospitality industry, in a management role developing and executing successful F&B programs.
• Aviation or high volume (e.g. institutional, stadium, cruise line, banquet) catering knowledge or experience is an advantage.
• Excellent knowledge of global food, trends and service delivery concepts.
• Extensive cooking expertise with thorough understanding of methods, equipment, and ingredients, plus comprehensive knowledge of religious, medical, and lifestyle dietary restrictions for compliant meal preparation.
• Expertise in trendy and classic cuisines, including Western, Oriental, Singapore and South East Asia cuisines.
• Self-driven, proactive, creative and customer-oriented.
• Effective communication and people management skills to collaborate with and influence stakeholders.
• Leadership skills to motivate and guide the catering partners.
• Proficiency in basic software such as Microsoft Office suite.
• Competency in using systems for menu planning and analytics, with a forward-looking mindset to embrace emerging technologies, including GenAI.
• Fluent in oral and written English. Fluency in other languages will be an advantage.
• Ability to do presentations and prepare relevant materials.
• Meticulous attention to detail, reliable deadline management, and strong administrative skills, complemented by strategic thinking that connects daily tasks to organizational goals while anticipating operational impacts.
